Sancocho is a popular Caribbean cuisine. It translates to stew or soup. The stew consists of meat, potatoes, and other vegetables (i.e., yuca, plantains, mini corn on the cob, etc. ). Sancocho is great if you want a whole hearty meal. It also makes great comfort food. As most people say soup is good for the soul. I hope this Puerto Rican dish will bring you great comfort as it does for me and mi familia.

Sancocho
Ingredients
- 2 2 lbs Cubed beef
- 4 packets Beef Bouillon
- 2 packets Sazon
- Adobo - All Purpose Seasoning
- Onion Powder
- 2 boxes Unsalted beef stock
- 1 can Goya tomato sauce
- 1 bag Corn nibblers Mini corn on the cob
- 1 bag Goya sancocho tropical vegetable mix
- 4 tbsp Sofrito
- 4 tbsp Recaito
- 6 Red potatoes Wash, peel, and cut
Instructions
- Wash beef and then season it with sazon, 2 pck beef bouillon, sprinkle adobo and onion powder
- In a 10qt pot fill with water about halfway and bring to boil at high heat
- Add tomato sauce, 2 pck of beef bouillon, sofrito, recaitio, and the cubed beef
- Cook beef for 3 hours on medium heat or until tenderized. At this time wash, peel, and chop potatoes
- Once the water decreases by half, then add 2 beef stock boxes
- Insert corn nibblers, chopped potatoes, and the sancocho mix into the pot
- Cook for 1 more hour or until the vegetables are soft
- Serve by itself or with a side of white rice
