L U N C H / D I N N E R I D E A I saw this rec L U N C H / D I N N E R I D E A

I saw this recipe on @elliemecham YouTube Channel Ellie + Jared. I decided to go on an Anti-Inflammatory Diet for 3 weeks. What I love about this dish is that it’s easy to make, it’s simple, and it taste really good ( and I am a picky eater ).

Prep Time: 30 mins
Cook Time: 20 mins

Ingredients:
6- Chicken cutlets
Asparagus
2-Bell Peppers
8- Garlic Cloves minced
Sea Salt
Coconut aminos
1 lb zucchini noodles

Directions:
-Wash and cut chicken cutlets into cubes.
-Place cubed chicken in a gallon size ziplock bag
-Minced the garlic and place them inside the bag with the chicken
-Add seasoning of choice and about 2 Tbs of coconut aminos in the ziplock bag
-Mix everything together
-Preheat 2 skillets with olive oil on medium heat. In the first skillet, use for cooking the chicken until golden brown. The second skillet, cook the zucchini noodles. Add a few tsp of coconut aminos to the zoodles. When the zoodles are very soft, they are done.
-Preheat the oven to 220 degrees
- Wash your vegetables
-Cut bell peppers
-On a baking sheet, spray some ghee and add your vegetables. Sprinkle some olive oil and sea salt. Cook the vegetables for about 10 mins or until your desired.

Adobong Baboy (Pork adobo) - SO FRICKIN FLAVORFUL! Adobong Baboy (Pork adobo) - SO FRICKIN FLAVORFUL!

Thanks mom for the recipe!

Ingredients:
Marinade
1 lb pork belly sliced 1”x2” or cubes
1 head garlic roughly chopped
1 can sprite mini (7.5 oz)
1 tbsp oyster sauce
1/4 cup soy sauce
1 tsp whole peppercorn
1/8 tsp ground pepper
3-4 bay leaves
When cooking:
Small onion or 1/4 of a large onion
1/4 cup white vinegar
4 eggs (or however many you want no ones judging)
At least 2 tbsp preferred cooking oil ( vegetable oil, olive oil, etc)

Method
Combine marinade ingredients and refrigerate meat for at least 2 hours.
Once the meat is marinated to your preferred marination time, prepare next ingredients and steps.
Cook the eggs in boiling water for 10 minutes.
Preheat frying pan and add about 2 tbsp of preferred cooking oil.
Separating the pork belly from the marinade (reserve marinade for later), brown the pork belly. Once seared, remove pork belly from heat. Add chopped onions to pan and cook until aromatic.
Add back the pork belly. Pour in marinade reserves and white vinegar. Stir the adobo on medium high heat with the liquid bubbling.
Then lower the heat until it is simmering.
Cook for an additional 10-15 minutes.
Within that time, peel and rinse your hard boiled eggs. Add to the adobo and stir. Let the eggs sit in the sauce for a few minutes. The eggs will absorb the flavor and take on a brownish color. The deeper the brown the more flavor is on the egg.

Put it on a bed of hot fluffy rice and you have an epically flavored dish for the seasons.

Try it, it’s good!!
